Zucchini and Basil Soup
Serves 4
Prep time: 30 minutes
Cooking time: 20 minutes
Ingredients:
2 large onions, finely chopped
Olive oil
4 large zucchini
3 tomatoes
3 potatoes
Salt and pepper
1 bunch basil, chopped
1 liter (1 qt.) vegetable or chicken stock
Directions:
In a deep saute pan, brown the onions in the olive oil. Dice the zucchini, tomatoes, and potatoes and add them to the onions. Add salt and pepper to taste and let braise for 20 minutes. When the vegetables are tender, add the chopped basil and the stock and heat through.
