Scallop Rolls with Lime and Basil
 
Serves 4
Prep time: 15 minutes (plus 1 hr. to marinate)
Cooking time: 10 minutes

Ingredients:
  • 2 phyllo pastry sheets, cut in fourths vertically
  • 4 medium scallops
  • 8 basil leaves

    For the marinade:
  • 1 small red sweet pepper
  • Juice of 1 lime
  • 1 small clove garlic, chopped

    Directions: Place the scallops in a shallow dish. Mince the red pepper, combine with the chopped garlic and sprinkle the mixture over the scallops. Pour the lime juice over all and cover the dish with plastic wrap. Marinate the scallops for about 1 hour in the refrigerator.
     
    Lay one phyllo strip on top of another and brush with oil. Put a basil leaf in the center of the dough, place a scallop on top of the leaf and another leaf on top of the scallop. Fold the dough around the scallop to form a triangle. Fry the packages over medium heat for about 10 minutes, until golden on all sides. Serve warm.
